Chicken Tarragon

I had such a yummy dinner last night!   And it was easy peasy!

You know how you can buy those rotisserie chickens at the store?  I took one home and pulled off the hunks of chicken.   

Then, in a coffee cup, I mixed 1 part dijon mustard to 2 parts half and half  ( you can also use cream ).

I mixed that up and poured it over the chicken.

Then I cut up a bunch of fresh tarragon and mixed that in with the chicken/mustard/half & half blend.

Then I squeezed lemon juice over it, added some pepper, and nuked it in the microwave until it was hot.

I made some jasmine rice for the family to go with it  ( I didn't have any of the rice ),  and served it with a salad.

Very tasty, and my family loved it!

Does your family like "Better than mashed potatoes" from WBC? Would be a great side instead of rice.

I haven't ever heard of it.  What is WBC?

Ah... Wheat Belly Cookbook.   Gotcha.    ::)

Actually, I didn't think of doing that for this recipe.  Good idea!

We tried the WB (Wheat Belly) rice a few days ago for the first time and loved it! I just added some diced onions.   And next time, might throw in some grated cheese.
