Mardi Gras Grilled Eggplant Po' Boy Recipe

MARDI GRAS GRILLED OR BROILED EGGPLANT PO' BOY


3-  4 Japanese eggplants cut in 1" thick slices
1 tsp kosher salt
1 tsp dried thyme
1 tsp crushed red pepper flakes
1 tsp garlic powder
1 tsp black pepper

1/4 cup olive or melted coconut oil
1/4 cup Creole Mustard*
1 TBS worcestershire sauce

*Creole Mustard
6 TBS dijon mustard
1/2 tsp. worcestershire
hot sauce to taste


Toss sliced eggplant in oil/mustard/worcestershire sauce mixture to coat.  Use bowl or plastic bag.  Add dry spice mixture and toss to coat again.  Set in refrigerator 1 hour.

Place on foil lined baking sheet to broil 4 minutes on each side or use barbecue grill, 4 minutes on each side.


Serve with lettuce, creole mustard, mayo in a wrap.
