Fried zucchini frittata?

That's the best name I could come up with.  I threw this together as an experiment for dinner tonight and it was amazing.  And super simple. 

1/2 medium zucchini, shredded
2 eggs
2 T coconut flour (approximately)
salt, pepper, and garlic to taste
Liberal amount of butter (or ghee, or lard, or bacon grease...)

Melt butter in a small skillet (I used ceramic) over medium heat
Add shredded zucchini
Allow to cook for about five minutes, stirring occasionally
Add coconut flour and stir
While zucchini is cooking for about five more minutes (more if you would like the zucchini crispy), beat two eggs in a small mixing bowl
Add zucchini to eggs and stir
Add seasonings to mix
Melt another tablespoon or two of butter in the skillet
Pour egg and zucchini mix into skillet
Cook first side until mix cakes and will flip easily.  Should be golden brown on bottom. Takes about five minutes, maybe less.
Flip and continue cooking about 2-3 more minutes, until golden brown on both sides. 

I think you could easily get two servings out of it, and I think it would keep well for a day or two. I ate the whole thing, along with a half a head of roasted cauliflower.  Boy am I full, but man was it good!
