Mini Beef and Spinach Pie

Laura' Lean Beef web site posted a "Mini Beef and Spinach Pie" recipe.  It is basically lining a muffin tin with beef and filling it with a spinach/goat cheese mixture and then baking it.  This looks pretty good for a brunch or party item you could make in advance and set down on a tray.  They can be served hot or cold and even made bite sized in a tiny muffin tin.  Go to "LaurasLeanBeef.com" for the recipe.  I've seen this kind of "pie" made with a sausage crust and other fillings. 


With the holidays coming up, I thought this might be a useful recipe.    :)
