Twinkies and Donuts

I'm sure most everyone here reads Maria Emmerich's blog with the wonderful recipes.  They really work, and last Summer, these two recipes where my very favorites to make for my daughters snacks.  I bought the two pans one needs for making either the Twinkie or the Donuts, and I had so much fun finding new ways to change the recipes and make different fillings and glazes. a favorite is just melting dark chocolate and covering half the twinkie or donut using a pastry brush.

 My daughter decided to go dairy free about half way through her pregnancy, so I started using mostly coconut milk for all the baked goods, and I also bought coconut flour and really love baking these items with it.  I experimented a lot and find it easy now to know what consistency a dough has to have, to be successful.  I never throw away anything, even if it breaks apart after baking etc.  Those baked goods would be used in combination with whipped cream, or ice cream and some berries, to build a nice dessert in a fancy glass, or something like that.  So much fun to be creative!
