Can't find Mayo recipe

I thought there was a simple mayo recipe posted
here recently.  I can't find it.  I read so many blogs
it may have been another site.


Anybody remember seeing it.  It used Olive Oil,
Coconut oil, egg yolk, mustard...


Why can't I find it?

Okay.  Found it.  On Dr Davis's site:


I have been using the following recipe:1 large egg yolk1/2 tsp. mustard (opt.)1 1/2 tsp. fresh lemon juice (divided)1/4 cup light olive oil1/4 cup liquid coconut oilS & P to taste


In tall, narrow container, combine yolk, mustard. 1 tsp. lemon juice. Using an immersion blender, blend until emulsified. Add oil, drop by drop until mixture is thick and creamy. Add S&P, additional lemon juice to taste. Keeps for about a week or so in refrigerator.

Will definitely have to try this.  Mine never really works out well, but I think I know what I've been doing wrong.  I love mayonnaise and have been buying Duke's since it has no sugar, but still the bad oils.  Thanks for posting the recipe, sounds good!

Here is the one I use and it has worked for me 99.99% of the time. [The one time it didn't might have been caused by a non-fresh egg or stale lemon juice?]



1 egg yolk, room temperature [discard egg white for thicker mayo]
1 tablespoon lemon juice, room temp.
1  teaspoon Dijon mustard
   
cup Classic olive oil
salt
1 tsp Splenda




Put ALL the ingredients into a tall container that will accommodate an immersion blender, blend on low till emulsified, which generally takes less than 30 seconds. The secret???  ROOM TEMPERATURE ingredients.


I have other recipes that create larger amounts, but, since this is homemade, I want to be able to use it all in a relatively short amount of time.

Thank you so much, Linda I think I read your post on this over at WBB and made a note of it, but then forgot where it is have to get better organized.  That's what's so nice about this forum, you can search and find things. ;)


I do have an immersion blender and can't wait to try this one!
