Avocado Sauce/Mayo

This is an all purpose recipe for avocado mayo or sauce for noodles, zoodles, anything else.  I use it for a chicken salad, fish salad and similar as well.
Adjust the oil for your purpose.  I've used it as a toping for broiled/baked fish.  Use immediately or store in dish with cover lining the top so air doesn't oxygenate and darken it.

AVOCADO SAUCE/MAYO


Combine in food processor:


2 ripe avocado
1/2 cup fresh basil
2 cloves garlic
2 TBS fresh lemon juice
pinch kosher salt and pepper to taste
1/3 cup olive oil




Combine all ingredients except olive oil in food processor or use immersion blender.  Slowly drizzle the live oil into the mixture with the motor running.

Avocados are so amazing has anyone made the chocolate pudding with them?  So delectable ...
