tip for cooking trout/salmon/char

I used to dredge my trout/salmon/char in a seasoned flour mixture, then fry it. I usually make a cream and mustard sauce to finish it.

I decided to dredge the fish in just coconut flour, and that not only worked well, but made an even nicer crispy finish on the fillets.

I cook it in butter, then add a bit more butter after the fish is out of the pan. Sauce is 1/4 cup heavy cream and a tablespoon of grainy mustard. Heat 'til thickened slightly.

Is it just coconut flour or did you use anything else like flax meal?  Also did you dredged in milk or egg before flour?

Thanks for the tip, Merlin. My family loves salmon. I like this cooking suggestion (we typically bake it). Do you fry it in coconut oil?

As previously noted, I cook the fish in butter, then add a bit more butter when it's time to make the sauce.

I do the same as you Merlin with my trout, but I add an half lemon juice along with the cream and butter... Delicious!
