This was quick and yummy.
5-6 strips of bacon (not sure, I didn't pay attention), cut into chunks
1/2 green pepper, cut into chunks
1/4 red pepper, cut into chunks
2 eggs
fry bacon to extract the bacon fat and bacon is just about done
add peppers and lower heat, fry until peppers are to your desired softness
plate the bacon N peppers
fry your two eggs in the same pan.
place the eggs on top of your bacon N peppers. I had mine with a large salad of leafy greens and an olive oil and balsamic vinegar dressing, sprinkled some monteray jack cheese on salad.
very tasty.
