Spaghetti Squash

I just tried Spaghetti Squash as a substitute for spaghetti noodles, with a homemade spaghetti sauce...very good!!

I love spaghetti squash.


Yesterday when I was volunteering for a school function, this other volunteer had a paleo meal she brought with her that had spaghetti squash, sausage, eggplant, tomatoes and spices in it.  It smelled soooo good!

Sounds delish! Eggplants has always wierded me out a bit.. do you guys leave the skin on or peel it? I wonder if I"ve just always had it too mushy..

If I can find white eggplants, I don't peel because the skins aren't tough. I also try to buy the males, as they're seed free. (Look on the bottom....female will be indented, males won't).
