Philly Cheesesteak Stuffed Peppers

I tried a new recipe today and it was delicious! I used poblano peppers because DH's stomach doesn't tolerate bell peppers well (but poblano peppers are ok, go figure). I used Black Angus roast beef from the deli. It was a little labor intensive for me, but I never cooked much in my previous life (B4 WB). As you can see, it's from Peace+Love+Low Carb's website.

I'm drooling! That will be on my menu next week. I've made stuffed peppers a lot in the past, but always the traditional way (or at least what I consider traditional for my family) using rice and ground beef and some type of tomato base and cheese. This looks delicious! It will be another winner for sure.

Not really. Cut off tops & chopped usable top portions, chopped onion, brown beef, drain, mix w/ chopped veggies, add  Mexican seasonings (cumin, oregano, crushed red peppers) onions, then stuffed peppers with cheese on bottom (I used cheddar but wanted to use pepper jack but out). Added layer of cooled beef mixture, another layer cheese. Top w beef. Cook @ 350 for at least 30 minutes. Top w cheese & cook another 5-10 minutes until starts to melt. Very easy.  Wanted to add jalapeņos but DH had acid reflux because he eats wheat for lunch. When he went full wheat free, acid reflux completely stopped. Oh well. At least his dinners are healthy.

I have the same problem, Deanna.  I gave up bell peppers years ago, but love poblano peppers (Chiles Rellenos, anyone?). 
 
Thanks for the link and recipe.  Based upon the photos in her website, I think Kyndra lives in my neighborhood (or very near it)!

Lin, I roasted my poblanos first:



Preheat broiler in oven. Line a baking sheet with deep sides with foil. Place peppers skin side up on the sheet. Lightly baste or spray with olive oil and broil in oven for about 6 minutes. Flip over and cook another 5-6 minutes, until nicely browned.


They lose their shape and I just put the "stuffing" on top. They're so good.


I just posted another recipe for stuffed poblanos...Mexican style...I make them often and we love them.

Made a variation of this dish last nite. Instead used sirloin steak, havarti cheese on bottom, and sprinkled crushed hot cherry peppers on meat mixture before topping with provolone. DH has included this dish in his top 5.   Love the Peace Love website. Thank you!
