Whipped Cauliflower

Our way of eating must really be making a difference.  Parade Magazine has published this recipe.


WHIPPED CAULIFLOWER


1 head cauliflower cut into chunks
2 cloves garlic, crushed
1/2 cup whole milk or cream
1/2 cup crumbled feta or blue cheese or cream cheese




Place cauliflower, garlic and milk in a large pot.  Cover. Bring to a boil and then lower heat to a simmer.  Cook about 15 - 20 minutes until cauliflower is very tender.  Puree until smooth using your immersion blender or a food processor.  Add crumbled cheese.  Blend a bit more if you like this smoother rather than chunky.
