Paleo Valley Beef Sticks

Found some of these in the back of my drawer in the fridge today and decided to look up ingredients.  They are supposed to be 100% grass fed and show no carbs even though it says there is some dextrose from Tapiocha.  Not sure how to figure this.  Most of the other stuff doesn't seem too bad, but I'm still in the learning stage so would appreciate some input on the ingredients.  Thanks all.

Yep. Both of those raise an eyebrow. The carbs may be very low, but zero is suspicious.

And they appear to be the only food brand on the planet that has misspelled tapioca (you've transcribed it accurately from the NF panel). That would cause me to look deeper into their general competence.
