Brussels Sprouts Slaw with Walnuts and Pomegranate

This recipe appeared in today's paper.  It was developed by The 15 Minute Chef, Jill Wendholt Silva. 

BRUSSELS SPROUTS SLAW WITH WALNUTS AND POMEGRANATE

Serves 4

14 fresh brussels sprouts
1/4 cup coarsely chopped walnuts, toasted
2 TBS extra vigin olive oil
1 TBS fresh lemon juice
3 TBS crumbled pecorino romano cheese
pinch of salt
dash black pepper
1-2 TBS pomegranate seeds

Trim bottom of sprouts and discard any loos or discolored seeds.  Use a sharp knife or mandoline to thinly slice the sprouts.  You want a "shaved" thickness if possible.

Place shreds in your bowl, add remaining ingredients.  Toss evenly.  Make sure your sprouts are separated into small shreds.  Pomegranate seeds can be placed all over top or mixed in.

Serve at room temperature.

The pomegranate seeds are less than 5 grams of carbs and add a sweet-tart taste.   I have frozen the seeds in quartered fruits, and then scraping out the seeds as needed.  Pomegranates are becoming more readily available so this extra step may not be necessary.

This sounds delicious, even without the pomegranate seeds would be good!  Will have to try, might get some at Costco today they have those lovely fresh brussels sprouts.
