Do you miss cereal?

I definitely did, especially on the weekends.  I make this recipe about every two weeks and it is DELICIOUS!  I usually double it with good results, but whether it's doubled or not, I also bake it for quite a bit longer than the recipe calls for.  It's probably closer to about 45 minutes total.  I tried substituting stevia for the honey once (because I was out of honey) and although it tasted ok, it wasn't quite the same and the cereal didn't hold together very well.  I guess the honey serves as a binder as well as a sweetener.  I try to stay away from sugar, honey, and pretty much all sweeteners but I'll make an exception every once in awhile for this!


Raisin Nut Crunch
(from FastPaleo Top 100 of 2012)


Ingredients
1/2 c. sunflower seeds
1/4 c. pumpkin seeds
2 T. squash seeds (or other seed, I usually use more pumpkin seeds)
1/2 c. almond meal/flour
1 1/3 c. unsweetened shredded coconut (I use the coconut chips for more of a "flake" texture)
1 c. almonds (or other nut), chopped (I like sliced)
1 1/2 t. cinnamon
3 T. coconut oil
1/4 c. raw honey
1 t. vanilla
1 c. raisins, added after cereal has baked (optional)


  • Preheat oven to 325 degrees.
  • Combine all dry ingredients except raisins
  • Warm coconut oil and honey slightly so they are easily incorporated.
  • Pour oil, honey, and vanilla over dry ingredients.  Mix well.
  • Spread cereal mixture over large baking pan (15 x 10 or bigger) (I put parchment on mine)
  • Bake at 325 for 20 minutes.
  • Take out of oven, stir mixture and bake for another 3 - 5 minutes or until lightly browned.
  • Cool.  Add raisins
  • Store in an airtight container. 
  • Hide container if you do not want everyone to eat all of your cereal.  ;)
  • DONE!

I was a big cereal eater before WB.   And, I thought I was eating a super nutritious cereal at that, with lots of good whole grains.


I'll have to try your recipe.  Thanks for the picks.  Looks good.   I do something similar but still different from yours.

I haven't been a cereal eater in over 15 years, even before I went wheat-free.


This morning, after I ate my eggs, bacon, and avocado, I felt really, really good. Protein makes you satisfied.

I still do miss cereal. I never liked granola, though. I liked Cheerios (the plain ones) and puffed wheat. And oatmeal.


But eggs for breakfast are good. And my wheat free french toast. And pumpkin spice donuts from Gourmet Girl Cooks. and...and....

I missed cereal more than anything in the beginning. Before WB I ate granola with a banana 6 mornings a week. On Sundays I had oatmeal with brown sugar, nuts and raisins. I then went through mixing several versions of my own granola...then just stopped that. Right now I'm buying the granola from WFMF and we have it about once a week. It's too sweet for me, so I pour a little in a bowl and add pumpkin seeds, sesame seeds, coconut flakes, sometimes ground pecans, chia seeds, and a few raisins. I use coconut milk when I have it or half 'n half when I don't. DH uses h&h, he doesn't like coconut milk. The chia kind of thickens it...not bad.

Meant to mention that we've had eggs of some form for breakfast for 3+ years. I finally got tired of them. I should have started a variety of breakfasts sooner.
