Zucchini, Yellow Squash and Tomato Bake

This is a recipe I tweaked....the original had potaotes.  I've made it for two and I've made it for a group of 12....so use your judgement with portions.


Layer the bottom of a baking dish with sauteed onions and garlic
Slice zucchini and yellow squash 1/4 inch thickness
Slice red and yellow tomatoes 1/4 inch thickness
Arrange slices vertically in baking pan, rotating both colors of zucchini, yellow squash and tomatoes (it makes it look really pretty!)
sprinkle top with rosemary and thyme as well as salt and pepper
cover witth foil, bake 30 minutes at 350
remove, topo with Italian cheeses and bake (uncoverd) another 15-20 minutes

Dang I wish I'd seen this before I went to the farmer's market yesterday!  Looks great!
