Garden Fresh Meatballs

Made this recipe last night, and it was so so so yummy.
 
Modifications: Used just half a yam to cut down on starch. Instead of a jar of roasted red peppers, I roasted two red peppers and chopped them up in the mini food processor. Also, I was running short on time, so I divided the mixture into two large loaf pans and baked it that way. Baked it an extra 10 minutes with the foil cover removed in order to brown the top of the loaves.

Last night we had garden fresh meatloaf (see recipe section) and kale potato soup. The soup isn't WB compliant, since it does have potatoes, but the amount is small (we used four small red potatoes instead of the two medium Yukon Gold potatoes that the recipe calls for). The recipe serves 6. I'm going to experiment to find a nonstarchy vegetable that will pair nicely with the kale and onions.
