While this cassava flour looks very promising, it is over 100 carbs per cup!  Care needs to be taken when using this.  I really like making crepes and filling them with spinach-cream cheese-mushroom or similar fillings. The web site recipes show some terrific uses, but we must keep in mind that this is very high carb so use should be quite limited.

Google says 78 grams per cup.  Then the recipe
uses 3/4 cup, and that's split into 6, which
equals 9.75 grams per serving.  That's high
for anybody trying to limit carbs to 20 grams
or less per day, which is what I do.

Interestingly, even though it is still high in carbs, it's still low on the GI index, probably because of resistant starch.

And Dr. Axe has this to say:

Dr. Axe must not be much of a baker....he mentioned a couple of times that all purpose flour contains baking powder....
