Oven Roasted Candied Tomatoes

I just saw a delightful recipe for garden tomatoes slow roasted in olive oil.  This brings out the sweetness of your tomatoes and the olive oil is super flavorful.  These tomatoes can be frozen too!  Go to The Splendid Table web site for the specifics.  I can't seem to get a working web site hyperlink.

No.  It is called:  OVEN CANDIED SUMMER TOMATOES.  The slow roasting in olive oil brings out the sweetness and the tomatoes taste "candied".  I had an Italian neighbor who would make this and it was delicious.  I never saw a recipe until now.  The extra olive oil is wonderful on anything! 
Thanks for trying!  Basically you vertically cut the tomato in halves, quarters, or whatever according to size, the bigger the tomato, the more pieces.
Use a metal baking pan and place the tomatoes in the pan, skin side down.  Pour about 1/2 - 1 cup olive oil over them and roast for about a half hour at 350*  If they aren't browned and crispy on the cut side, spoon some of the oil over them again and roast some more, maybe another 20 minutes to half hour.  You might want to lower the temperature and bake them more.  They become crispy, very sweet and a delicious snack or addition to any meal.

I have made something similar many years ago, slow roasting on low heat for 8 hours made them very delicious.

Yes!  This is the recipe.  To "mimic" the brick lined bread ovens, my neighbor used to place a few bricks in her oven while baking these.  She lowered the temperatures every half hour or so by about 15 degrees.  I'm going to use my gas grill, maintaining the temperature by using the indirect heat feature as well as a few bricks! 


Also note that many of the bread ovens used in days of old were coal-fired and this gave off a slow, long lasting heat as the multiple layer brick lining was heated up.  Modern appliances can't really heat in the same manner, but the brick does help! 


I guess the gremlin that you found, found me!   Thanks for posting the link.  With tomatoes ripening now, this is a great way to use up a bunch in a most delicious way.

I have "preserved" any extra tomatoes from the garden by roasting & freezing. Toss in a couple cloves garlic. Tastes like summer in January.

That garlic is a great idea!  My neighbor would place her batch in jars and refrigerate them when she ran out of freezer space.  Keeps for months.
I bet adding a few to a cold weather dish will really perk it up!

This sounds delish! Our local tomatoes are about gone. I chopped up my extras from farmer's market and froze them in zip lock bags to use in the winter for soup.

Just this week I cut up a bunch of tomatoes from the garden and stuck them in my dehydrator.   Now I have sun dried tomatoes available for a loooooong time.
